Chef Michael Elégbèdé ‘13 is the chef-owner of ÌTÀN in Lagos, Nigeria. He was compelled to return to Nigeria after 13 years in America to explore the diverse cultures and traditions that captures Nigerian cuisine. He spent a good portion of the time back traveling to more remote areas of the country experiencing, documenting, and learning the unique nature of their cuisine and ingredients. At ÌTÀN Test Kitchen, Michael uses these experiences to reimagine cuisines around Nigeria and tell their stories through a tasting menu experience at a 10-seater chef’s table.
