Sponsor Profiles in Sustainability & Health

50CUT

50CUT is at the forefront of driving sustainability and health across foodservice segments. We partner with local farmers in Hyde Park, NY to grow mushroom roots above ground through a sustainable cultivation technique that maximizes access to this nutrient-rich and delicious culinary treasure that usually remains buried underground. We empower chefs and consumers to enhance their favorite meat dishes with all of the beneficial attributes of mushrooms. When added to ground meat, 50CUT adds nutritional benefits like increased fiber and a reduction in saturated fat, while dramatically reducing the dish’s water and land usage, and carbon footprint.

Aquamar

Aquamar believes that everyone should have access to high-quality protein. As a leading innovator in value-added processing, we endeavor to make delicious, healthful, sustainably harvested seafood that is convenient and affordable. Our first innovation was to help introduce the ancient culinary art of surimi to North America almost 40 years ago. Since then, we have broadened our portfolio to include various types of shellfish, including mussels—one of the most sustainable forms of protein on the planet. On the industry side, we are members in good standing of the Marine Stewardship Council, which certifies that our seafood is harvested responsibly.

ILLY CAFFé

illycaffè earned  B-Corp certification for meeting the highest standards for social and environmental performance, transparency, and responsibility. Ethics and sustainability are part of illycaffè’s DNA since its founding in 1933. It is applied to the company’s entire supply chain, which is built on a system of direct relations with suppliers based on four pillars: working directly with the best Arabica producers, transferring knowledge to them through illycaffè's University of Coffee and the work of agronomists and technicians, paying them in a way that makes production sustainable, and creating a club of illy producers. We continue to make a difference and lead by action, which includes our goals to promote regenerative agriculture and to reach Carbon Neutrality by 2033.

Jack & annie’s

Historically, jackfruit, a sustainable crop, was largely underutilized, with 70% wasted due to inaccessible supply chains. Our partnerships with 1,700 family farmers in India have unlocked its potential. These farmers now earn 10-40% of their income from jackfruit. Not only does it have a carbon footprint 94% lower than beef, but it's also naturally resilient to droughts and pests. Its texture makes it an ideal meat substitute, offering foods higher in fiber and lower in calories and fat. Jackfruit is a triple win: for farmers, our planet, and our customers.

THE kingfish company

The Kingfish Company is a first mover in land based aquaculture, raising yellowtail kingfish from egg to plate using recirculating aquaculture systems (RAS) in The Netherlands. Our yellowtail is raised without antibiotics using 100% green electricity, ASC certified, and rated a Green Choice by Seafood Watch. Sustainability and respect for our fish and the environment form the basis for our design, operations and technology decisions. We go to great effort to ensure our operations are safe and healthy for our customers, stress-free and humane for fish and have a minimum impact on surrounding nature.

MCCain foodservice solutions

As a global leader in prepared food production, sustainability isn’t just our goal at McCain — it’s our responsibility. Our operational presence in many parts of the world gives us a unique opportunity to effect real change in real time, and lead by example for others in our space. Our commitment to sustainability is rooted in four key principles: smart and sustainable farming, with a strong emphasis on agronomy; making efficient use of natural resources; growing simple, responsible and sustainable food; and maintaining thriving communities in which we work.

OATLY

At Oatly, we want to be a positive driving force behind changing an outdated food system. Studies indicate that, on average, plant-based drink products consumed in place of cow’s milk products result in lower land use, energy use, water use and climate impact. As a company, we look to work with farmers, suppliers, scientists, and other partners to develop our products in a way that we believe is beneficial, to both our customers and the planet. Making our goal to be delivering products that have maximum nutritional value and minimal environmental impact.
