Pedro Miguel Schiaffino ‘97 is a renowned Peruvian chef known for his pioneering work in Amazonian cuisine. A Culinary Institute of America graduate, he has dedicated his career to showcasing the biodiversity of the Amazon through sustainable gastronomy. Founder of Malabar and Ámaz, he received the Icon Award from The World’s 50 Best Restaurants in 2019 for his contributions to the culinary world. Schiaffino leads Despensa Amazónica, a non-profit promoting Amazonian ingredients and sustainability, with projects like the sustainable fishing of wild paiche. After Malabar and Ámaz closed during the pandemic, he became the head of La Rosa Náutica, allowing him to explore another passion—the ocean—by working with seafood responsibly.
